Ingredients

Large pasture-raised eggs6 whole
Thick-cut uncured pork belly80 g, diced finely
Cultured butter30 g, softened
Fresh horseradish1 tbsp, finely grated
Anchovy paste0.5 tsp (or 1 small fillet, mashed)
Apple cider vinegar1 tsp
Dry mustard powder0.5 tsp
Fresh dill1 tbsp, finely chopped, plus extra for garnish
Fresh chives1 tbsp, finely chopped, for garnish
Flaky sea saltto taste
Freshly cracked black pepperto taste

Method

To hard-boil eggs: Place eggs in a single layer in your air fryer basket. Cook at 135°C (275°F) for 16-18 minutes for perfectly cooked yolks. Immediately transfer to an ice bath for 5 minutes, then peel carefully.

Slice each hard-boiled egg in half lengthwise. Gently scoop out the yolks into a medium bowl, setting the whites aside. Arrange the egg whites cut-side up in the air fryer basket.

Air fry the egg whites at 180°C (350°F) for 3-5 minutes, or until the edges are lightly crisped and golden (a subtle Maillard reaction adds delightful texture). Be careful not to over-crisp.

While whites crisp, render the pork belly: In a small skillet, cook the diced pork belly over medium heat until deeply golden brown and crispy, rendering out the fat. Remove the crispy bits (bacon crumble) and set aside. Reserve 1 tablespoon of the rendered pork fat.

To the egg yolks, add the softened cultured butter, reserved rendered pork fat, grated fresh horseradish, anchovy paste, apple cider vinegar, dry mustard powder, fresh dill, flaky sea salt, and black pepper. Mash with a fork, then whip vigorously with a spoon or electric mixer until exceptionally smooth and creamy. Taste and adjust seasoning.

Carefully spoon or pipe the yolk mixture back into the crispy air-fried egg white halves, creating elegant mounds.
