Pat the pork belly thoroughly dry with paper towels. Score the skin in a cross-hatch pattern with a sharp knife, being careful not to cut too deep into the meat.

Season the pork belly generously on all sides with sea salt, ensuring salt is rubbed well into the scored skin.

Heat a heavy-bottomed pan (like cast iron) over medium-high heat. Add the lard if using. Place the pork belly skin-side down in the hot pan.
