Method

Pat the wild boar shanks dry with paper towels and season generously with sea salt and freshly ground black pepper.

Heat ghee in a large Dutch oven or oven-safe pot over medium-high heat. Sear the shanks on all sides until deeply browned. Remove shanks from the pot and set aside.

Deglaze the pot with a splash of beef bone broth, scraping up any browned bits from the bottom. Return the shanks to the pot.

Pour the remaining beef bone broth over the shanks, ensuring they are mostly submerged. Add the bay leaf.

Bring the broth to a gentle simmer, then cover the pot tightly and transfer to a preheated oven at 150°C (300°F) for 3-4 hours, or until the shanks are fall-off-the-bone tender. Alternatively, you can braise in a slow cooker on low for 6-8 hours.
