Provolone contains no carbohydrate, so it does not raise blood glucose — and it still asks the pancreas for insulin. Protein does that. A food can be flat on one axis and not the other, which is why these two numbers are measured separately and never calculated from each other.
Why there is no milligram figure here
A glycemic index is measured on a food. "Your blood sugar will rise by X" is a claim about a person, and it depends on the rest of the meal, the cooking, and you. We show the band and the published index, and we do not invent the reading — this app does not take blood.
